  Actually, not too hot at all, but a sure cook off winner

Abednego’s Fiery Furnace Chili


4 large organic onions, chopped
1 large green pepper, seeded and chopped small
3 T olive oil (cold first pressed)
1 T each Mustard Seed, chili powder (This is a balanced chili, really not too hot)
1 t each cumin seeds, unsweetened cocoa
¼ t ground cinnamon
1 16 oz. can organic tomatoes
5 cups cooked kidney beans plus 1-1/2 cups cooking liquid or water, or
3 cans (16 oz. size) kidney beans, un-drained, and 1 cup water
1 can (6 oz.) Organic tomato paste
Salt

In a 5 or 6 quart kettle
1. cook pepper and onion in oil over medium-high heat,
stirring occasionally, until onions are golden and peppers are soft.
2. Add mustard seeds and cook stirring for one minute.
3. Add chili powder, cumin seeds, and cocoa, and cinnamon, and tomatoes (break up with a spoon or clean hands (four hands are more more fun, wink wink)) and their liquid, beans and their liquid, and tomato paste.
4. Reduce heat and simmer rapidly, uncovered (mostly, but clean stove as you continue), for about 40 minutes or until most of the liquid is cooked away and chili is thickened; stir frequently to prevent scorching.

Season with salt to taste (not necessary with canned beans)

Pass Pink Onions, relish toppings, and lime wedges (Squeeze juice) to layer on top of chili. Makes 6 servings.

Pink Onions
1 quart pan
2 Cups water – high heat – bring to boil. Add 1-1/2 T lemon juice. Add 1 large red onion (use white if red un-available) (thinly sliced). Push down into liquid. Return to boil and cook, uncovered, over medium heat for 2 to 3 minutes. Drain onion

Mix onion in bowl with 1-1/2 t lemon juice, 1 T Olive oil, ½ t mustard seeds, ¼ t cumin seeds, and salt to taste. Serve at room temperature, or cover and chill until ready to serve.

Relish toppings
Separate containers
3 med. tomatoes, seeded/chopped
1 can (7oz.) diced green chilies,
1 med cucumber (Peeled and chopped)
1 cup sliced green onions
2 cups shredded cheese
